This really isn’t a recipe as much as it is a method of preparation. I love pork, who doesn’t. I purchased some of the really thick pork chops and wanted to cook them in some method that they got done all the way through without having to be burnt on the outside, or maybe not even brown on the outside.
I have a flat cast iron skillet that I love to use, so I took the flat cast iron skillet and melted some butter in it.
Then I seasoned the pork chops really well on both sides. You can use your seasoning of choice, I used salt, pepper, garlic powder and Mrs. Dash.
Then I put the chops in the hot skillet to brown really well on both sides.
Then I stick the skillet in a pre-heated 350 degree oven to finish cooking. If you wanted, you could use a meat thermometer to test for doneness, but I just go by looks and how they feel. It takes about 30 minutes to finish them depending on the thickness.
This method leaves the pork chops very tender and juicy. I am glad I accidentally stumbled upon this method.
- Two thick bone in pork chops
- salt, pepper, garlic powder or other seasonings of your choice to taste.
- butter
- Preheat oven to 350 degrees.
- Melt butter in a cast iron skillet.
- Season the pork chops, and brown both sides well in the skillet
- Place skillet in the oven to finish cooking. It takes about 30 minutes to finish.
- If using a meat thermometer cook to 145 degrees.
